Easy to Melt

New York Extra Sharp is the perfect texture for melting. The preferred method for melting is to shred the cheese so that is uniformly shaped, then allow it to rise to room temperature. Make a roux of flour and fat (to thicken the sauce) in a non-stick skillet and then, keeping the heat on low, add the cheese. Stir frequently and don't walk away. Once the cheese is smooth, remove it from the heat.
